Microsoft Exchange 2007 backup can be taken using "ntbackup" utility. During backup select at least the following from "C:\Program Files\Microsoft\Exchange Folder" for backup: 

  - Bin
  - ClientAccess
  - ExchangeOAB
  - Logging
  - Mailbox\address
  - Mailbox\MDBTEMP
  - Mailbox\schema
  - (Do not select Mailbox\storage groups)
  - Public
  - Scripts
  - Setup
  - TransportRules
  - UnifiedMessaging
  - Working

Also from "Microsoft Exchange Server" option in explorer folder view choose: 

  - "Microsoft infromation Store" along with all storage groups

Restore might require going into safe mode and restoring using "ntbackup". The steps are not tested for restore yet.
